Description
La banane est un long fruit légèrement incurvé, souvent regroupé sur le bananier en grappes nommées « régimes ». La banane possède une peau de couleur jaune ou verte facile à détacher qui contient du fluor. La partie intérieure est une savoureuse pulpe amylacée au goût sucré et à la consistance généralement fondante.
Les bananes figurent incontestablement parmi les fruits tropicaux les plus importants. En 1992, la production totale s'élevait à 66 millions de tonnes (bananes et bananes plantains); elle n'était dépassée que par la production d'agrumes. Les bananes mûres sont riches en potassium et en sucres. Elles sont très nourrissantes (90 kcal/100 g) et très digestes en raison de leur faible teneur en graisses. C'est la raison pour laquelle elles sont le plus souvent consommées crues. Les bananes sont cueillies vertes dans les plantations, aussi appelées bananeraies. Moins fragiles que les bananes mûres, elles supportent mieux le transport. Elles sont immédiatement acheminées vers les centres de distribution (marchés d'exportation), où le processus de maturation est parfois activé en ajoutant aux fruits de l'éthylène. En conditions naturelles, cet hydrocarbure est fabriqué par la plante elle-même.

- 30g de sucre (voire plus car la banane a un gout un peu fade avec le lait)
